"Whitefish" is a flexible term in English. In a broad, everyday sense, it can mean any food fish with pale, white flesh and a mild flavor. On menus and in casual conversation, people sometimes use it this way without naming the exact species. In a narrower and more technical sense, however, "whitefish" often refers to several fish in the Coregonus group, especially those living in cold freshwater lakes and rivers in North America, Europe, and Asia.

Several species can fall under this narrower freshwater meaning, including Lake Whitefish, Round Whitefish, and some fish called ciscoes. They are usually silvery, streamlined fish with small scales and pale flesh. Because the word can be used loosely, the exact fish meant may depend on the region, the speaker, or the context.

These fish are valued as food because their flesh is mild, soft, and easy to cook in many ways. They may be smoked, baked, grilled, or fried. In the Great Lakes region, for example, smoked whitefish and whitefish dip are well-known local foods.

Beyond the kitchen, the freshwater kinds play an important role in their ecosystems. They feed larger fish and birds and are part of the balance of lake life. They were also historically significant to Indigenous communities around the Great Lakes and other northern waters. Today, responsible fishery management matters if these populations are to remain healthy. So when you see "whitefish" on a menu, it may mean either a general kind of mild white-fleshed fish or, in some regions, a specific freshwater fish with deep local and cultural importance.
