Polenta is a traditional Italian dish, especially linked with Northern Italy, made by simmering coarse cornmeal in water or broth until it becomes thick and creamy. It is usually made from yellow cornmeal, though white cornmeal is also used in some regions. In English, the word usually refers to the cooked dish, not just the dry grain. Making it the old-fashioned way takes time and regular stirring, although quick versions are now common.

Historically, it was an important everyday food for poorer families because it was cheap, filling, and easy to make in large amounts.
