A maltster is a skilled craftsperson who prepares grains, most commonly barley, for use in brewing and distilling. This process, called malting, is not simply drying the grain. It is a carefully controlled set of steps that helps make the starches in the grain ready to be turned into fermentable sugars.

The maltster begins by steeping the barley in water and allowing it to germinate, or begin to sprout. This activates enzymes that start breaking down the inside of the grain. The process is then stopped by drying the grain in heat, a step known as kilning. The temperature and length of this stage are very important because they affect the color, flavor, and aroma of the malt, which in turn affects the final beer or whiskey. Different malts help create different kinds of drinks, from pale malts for lighter beers to darker malts for stouts and porters.

Historically, maltsters were incredibly important figures in pre-industrial societies. They often operated independently, supplying brewers with their essential ingredient. Their skills were highly valued, and they held a significant position within the community. While modern brewing companies often have their own malting facilities, the term "maltster" still carries connotations of traditional craftsmanship and expertise.
