The story of malt begins with grain, usually barley but sometimes wheat, rye, or other cereals, that has been allowed to partly sprout and then dried. This is not just random sprouting. It is a controlled process that develops enzymes, which help turn starches into sugars that yeast can use. For centuries, this has been central to brewing beer and important in making many whiskies.

But malt is more than something used for alcohol. The drying process, called kilning, can create different colors and flavors, from pale and light to dark and roasted. These differences help give beers and some whiskies their own character.

Beyond brewing, malt also appears in sweet foods. Malted milk powder, made by mixing malt extract with milk solids and usually wheat flour, is used in milkshakes, candies, and baked goods. It adds a warm, toasty, slightly caramel-like taste. You may also come across malt vinegar, especially with fish and chips.

Historically, malt was so important that "maltsters" were skilled workers whose job was to manage the malting process. They played a key role in places where beer production was part of daily life.
