This bright green paste is a well-known part of Japanese food. It is traditionally made from the grated rhizome of a plant grown in Japan and is often served with sushi and sashimi. Its heat is sharp and strong, reaching the nose more than the tongue, so even a small amount can feel powerful.

Outside Japan, many versions are made with horseradish, mustard, and green coloring instead of the real plant. Even so, people still use the word to mean that kind of hot green paste. The flavor is usually quick, clean, and bold, adding a fresh bite without lasting as long as chili pepper heat.
