Sherry is a fortified wine made mainly from white grapes grown near Jerez de la Frontera in Andalusia, Spain. It covers a broad range of styles rather than a single fixed taste. Some sherries are pale, dry, and delicate, while others are amber or dark brown, fuller in body, and sweet. The wine is best known for its layered flavors, which can include almonds, yeast, salt, dried fruit, caramel, and spice.

What makes sherry different from many other wines is the way it is fortified and aged. A distilled grape spirit is added, and the wine may then age in different ways. Fino and Manzanilla age under a layer of yeast called flor, which protects the wine from too much contact with air and helps keep it fresh, dry, and light. Oloroso ages with more contact with oxygen, so it becomes darker, rounder, and nuttier. Pedro Ximenez, often written as PX, is made from very sweet grapes dried in the sun and can be thick, rich, and almost syrup-like.

Sherry is often served as an aperitif, especially the drier styles, but it can also appear with food, in desserts, or after a meal. Dry styles go well with olives, nuts, seafood, and tapas. Richer or sweeter styles pair well with blue cheese, cakes, or simple desserts. It is also used in cooking and in some classic cocktails.

Historically, sherry became especially popular outside Spain in places such as Britain, and it appears in literature, trade history, and older social customs. Today it is still valued for its variety and food-friendly nature. In everyday use, the word usually refers to the protected Spanish wine style, though in older or looser usage it has sometimes been applied more broadly to similar fortified wines. In most modern contexts, however, sherry means the traditional wine from the Jerez area.
