Sainfoin (Onobrychis viciifolia) is a leguminous perennial plant native to southern Europe and western Asia, now naturalized in parts of North America and Australia. It is a botanical specialist that prefers well-drained, calcareous soils—those rich in chalk or limestone—where many other forage crops fail to flourish. This made it incredibly valuable to farmers historically, particularly in regions with thin or rocky soils.

For centuries, sainfoin was prized for its high nutritional value as livestock feed. Animals are particularly fond of the taste, and the plant produces sweet-smelling hay of very good quality. One of its most valued traits is that it is non-bloating, meaning it is less likely to cause the dangerous digestive problems in cattle and sheep that some other legumes, such as alfalfa, can cause. In addition, the plant fixes nitrogen in the soil, which helps improve the ground for later crops.

The name "sainfoin" is derived from the Old French phrase sain foin, literally translating to "healthy hay." This speaks directly to its reputation as a safe and superior feed source. While it is not as widely cultivated today due to the dominance of high-yield industrial forage, sainfoin remains an important part of traditional farming systems and is appreciated for its drought resistance. Its vibrant pink or reddish-purple flowers remain a lovely sight in meadows, serving as a premier nectar source for honeybees and other pollinators.
