Gazpacho (pronounced gahz-PAH-cho) is a cold soup from Andalusia in southern Spain. Historically, it was a simple country dish, made in part to use up ripe produce and stale bread. Interestingly, the earliest forms did not include tomatoes. Tomatoes arrived later from the Americas and eventually became the main feature of the most familiar versions.

Traditionally, gazpacho is made by blending raw vegetables such as tomatoes, cucumbers, bell peppers, onions, and garlic with olive oil and vinegar. Many traditional versions also include stale bread, which helps thicken the soup and gives it a smooth texture. It is usually seasoned with salt and sometimes pepper, then served plain or topped with finely chopped vegetables or croutons.

Today, you'll find many modern twists. Some versions include fruit like watermelon or grapes, while others add herbs or change the balance of vegetables. But at its heart, gazpacho remains a celebration of fresh, seasonal produce. It's more than just a soup; it's a taste of the Spanish summer and a good example of simple, practical cooking. You might hear someone say they're "having gazpacho" on a very hot afternoon or describe a fresh, chilled vegetable mixture as being "gazpacho-like." Just don't confuse it with other cold soups like vichyssoise, which is made from potato and leek. Gazpacho is known for its vegetable base, its cool temperature, and its strong link to Spanish cooking.
