Elution is the process of removing a substance from a material by passing a fluid through or over it. In many cases, the substance has been held on the surface of a solid, and the fluid carries it away. It is like gently washing something out of the place where it was being held. In the tea example, the hot water is the fluid, and it carries flavor compounds out from the leaves.
