Catsup, more commonly known as ketchup, is a sweet and tangy sauce typically used as a condiment. While most of us associate it solely with tomatoes today, its origins are far more diverse. The word itself comes from the Hokkien Chinese kê-tsiap, referring to a fermented fish sauce. British traders and travelers in Southeast Asia encountered these sauces in the 17th century and brought variations back home. Early English "catsups" were often complex concoctions made with ingredients like mushrooms, walnuts, oysters, anchovies, or even lemons—anything but tomatoes!

The tomato-based catsup we know today took off in the 19th century in the United States, and by the late 1800s it was being produced on a large commercial scale. Henry J. Heinz is often credited with helping popularize a consistent, commercially successful tomato ketchup in 1876, focusing on quality ingredients and reliability.

Today, catsup is a ubiquitous condiment enjoyed worldwide. It's used not only with classic American fare like French fries, hamburgers, and hot dogs but also as an ingredient in marinades, sauces, and even cocktails (Bloody Mary, anyone?). While variations exist—some are spicier, sweeter, or made with different types of tomatoes—the core essence remains: a flavorful sauce that adds zest to countless dishes. Interestingly, you might occasionally hear someone use "catsup" instead of "ketchup," a spelling variation that reflects its deep historical roots.
