casein

Casein is the name for a family of related phosphoproteins found in mammalian milk. It makes up about 80% of the protein in cow's milk and helps give milk its opaque white appearance. Think of it as the key structural protein that can be made to coagulate: when milk is acidified or treated with rennet, casein micelles destabilize and aggregate, forming the curd used to make yogurt, cheese, and other dairy products. When you see curds separating from whey during cheesemaking, casein is doing much of the work.

But casein's story doesn't end in the kitchen. Historically, casein was a vital ingredient for adhesives. Before modern glues, woodworkers and bookbinders relied on casein glue – made by treating casein with lime and water – because it created a strong, durable bond. It's still used today in some specialized applications!

Beyond food and glue, casein finds its way into paints and coatings (as a binder), early plastics (such as galalith), and even cosmetics. Scientists are also exploring its potential in making bio-based films and more sustainable packaging materials.

Interestingly, some people have allergies to casein, meaning their immune system reacts to it after they consume milk or milk-derived foods. Casein is one of the main proteins involved in cow's milk allergy. So while casein is a versatile and useful substance, it's not without its complexities. From the farm to the factory, from traditional crafts to modern materials research, casein continues to play a surprisingly important role in our world.
