The second "beluga" is the Huso huso, or beluga sturgeon. This is one of the largest bony fish in the world, capable of living more than a century and reaching lengths of over five meters. Unlike the whale, the sturgeon is prized in the culinary world for its roe (eggs), which is processed into world-famous beluga caviar. Because the fish matures slowly, it is particularly vulnerable to overfishing.
Historically, the whale was hunted by Arctic communities for food and oil, while the sturgeon has long been targeted for the luxury caviar trade. Today, both face modern threats: the whale struggles with sea-ice decline, shipping noise, and pollution, while the sturgeon faces river habitat loss, dams, and poaching for illegal caviar markets.
